Moist, sweet, rich date flavor –

I love this recipe. I think it’s best cooled, then wrapped and served the next day, but after than slice and freeze it because it’s so moist it will mold very quickly. It is really delicious….even for people who say they don’t like dates.



1 cup

dates, pitted and chopped

1 tsp

baking soda

1 cup

boiling water

1 Tbsp

soy margarine

2 tsp

egg replacer

2/3 cup

brown sugar

1 tsp

vanilla extract

2 tsp

baking power

¼ tsp


1 ¾ cup

unsifted whole/wheat flour

1 cup

walnuts, chopped


  1. Place chopped pitted dates in a mixing bowl.
  2. Sprinkle with baking soda and pour in boiling water.
  3. Add margarine and mix.
  4. In a second bowl, whisk the egg replacer in a litter water until light.
  5. Add sugar and vanilla, then baking powder and salt.
  6. Blend into the first mixture and mix well.
  7. Blend in flour completely and fold in chopped nuts.
  8. Pour into a greased 9x5x3 inch loaf pan and bake in a preheated 350F oven for 1 hour until loaf test done.
  9. Turn loaf out on rack to cool.  When thoroughly cooled, wrap well to store.
